Convo provoking questions

Why are we doing interviews?...Are interviews really the best way to capture our subject?

How can one best "encourage" the interviewee to tell them your story?

I think interviews are a decent way to get a perspective on a subject, but not necessarily capture a subject. To capture a subject is a hard thing to do b/c there are so many points of view out there. An interview, however, can give you some information about the subject that are central to the subject such as a sport-what the positions are called or dancing-what certain movements are called.
One can best encourage by having a conversation more so than conducting an interview. If you keep asking questions, the interviewee is not necessarily able to expand on what you have previously asked them and we get less information this way. Therefore, by getting down deeper in conversation and inspiring them to tell you their story is the best way to go.

I think that interviews are a great way to get a "real" perspective of somebody's views or an anecdote that they would like to tell. However, if you are not making a documentary or a reality show of some sort, I do not think that interviews are the best way to capture a subject. Sometimes, it seems as if you aren't able to capture the true essence of the person's story, through interviewing, due to the interviewee's cooperation.
